A Taste of Home
Since 1987 University of Georgia Food Services has requested that families send in the recipe for a favorite dish of their student on the UGA meal plan. From slightly over one thousand recipes sent in for this year’s event, the dining commons’ staff selected 127 recipes to feature on the menu for a Taste of Home 2008.
Offering a multitude of choices the menu encompasses the perfectly simple, the elegantly gourmet, family traditions, and a medley of culinary cultures. Committed to providing their customers with the finest day of dining of the year, the entire staff at food services embraces the challenge of preparing the numerous new recipes that must be adapted from home style cooking methods to restaurant style preparation techniques.
Mrs. Laura Green, 5th grade teacher at TSA, was one of those recipes selected to be served in the dining halls at UGA to over 8000 students.
The recipe she submitted was her now famous Chicken Parmesan.
Her ingredients are below. Notice how it was adapted to serve 8000 undergraduates.
Chicken Breast Boneless 2500 pounds
Fresh Minced Garlic 11 pounds 6 ounces
Sour Cream 250 pounds
Margarine 30 pounds
Grated Parmesan Cheese 190 pounds 6 ounces
Salt 10 pounds 6 ounces
Ground Black Pepper 1 pound 6ounces
Paprika 1 pound
Fresh Lemons 238 Pounds
Mrs. Green was a guest of honor along with the other recipe winners and was treated to a sampling of all the recipes last night (December 4th) in Athens. She also received a commemorative plate. Her Chicken Parmesan will be served in the UGA dining halls this year and next.
Laura’s daughter Whitley is a freshman at UGA.
